Sinigang na Hito sa Miso
Like most sinigang, it combines tamarind to perk up the broth with a tart fruity taste. However, this hito version adds a layer of flavor from miso paste, ripe soy paste, or miso.

With a full and delicious catfish, clear labanos, peppery mustard leaves, and delicious soup, this Sinigang na Hito sa Miso is delicious! It is refreshing and comforting, especially in cold weather.

Ingredient notes
Hito or catfish – freshwater fish with dark skin and very smooth. They are known to have “beards” or “mustaches”. You can also use candy which is another type of catfish and has a silver-gray color.
Tomato- I like to use ripe Roman tomatoes as it has a sweet and sugary taste
Ginger- adds bitterness, light taste, and warmth to the dish. It also eliminates the scent of catfish.
Miso- Philippine miso is usually yellow to light brown in color. It is made from barley soybeans. It has a soft, earthy flavor and is often used in beverages or as a condiment.
Tamarind- If you are using fresh unripe tamarind, boil it to soften it, put it in a sieve and grind it to extract pulp and juice.
Labanos- called daikon or white radish. It has a crispy texture and a cool, slightly sweet flavor.
Mustard leaves – have a sharp, pungent taste. Alternatively, you can use bok choy when mustard leaves are not available.


How to clean hito
To prepare the cooking, season the fish with rock salt and let it sit for a few minutes.
Sprinkle salt with a blunt knife.
Sprinkle with vinegar or calamansi juice and rub with salt.


Quick Tip
Along with the radish leaves and mustard, you can also add other common sinigang vegetables such as long yard beans, eggplant, and okra. You can also add sling haba or chili pepper with your finger to get a little spice kick
